12 great dessert recipes: Say No to Sugar!

Start your year off right by making some healthy changes in your diet. Saying no to bad foods is a great start, and foods that are high in sugar should be the first to go! Cutting out sugar, however, doesn’t necessarily mean cutting out sweets altogether; we have 12 great dessert recipes that use no sugar at all! Enjoy!


Sugar-Free Apple Pie
This easy to make apple pie cuts out all the sugar but none of the flavor.




Ingredients
■4 C. sliced apples
■1/2 C. apple juice concentrate
■1 1/2-2 tsp. tapioca, cornstarch or flour
■1 tsp. cinnamon, nutmeg or apple pie spice
■2 crust pastry
Directions

Toss all the filling ingredients together. Put in a pie shell and top with another crust. Seal edges and cut a few slits in top. Bake at 425 for 10-15 min. then bake at 325 for 35-45 min.


Sugar-Free Hot Cocoa Mix

You can make a homemade sugar free hot cocoa mix using pantry ingredients!

Ingredients
■15 C. instant powdered milk
■1 1/2 C. sugar (Splenda, Nutra-Sweet)
■1 C. cocoa
■1 1/2 tsp. salt
Directions

Mix all ingredients well and store. Makes enough for 10 quarts or 40 1-cup servings.



To use the mix, stir 1/2 cup of mix into 1 cup hot water for a warm drink or ice cold water for chocolate milk.



*Recipe can be cut in half or thirds.


Sugar Free Banana Bread

Ingredients
■2 eggs, beaten
■3 large or 4 small ripe bananas, well-mashed
■¼ C. buttermilk
■¼ C. melted shortening
■¼ C. Splenda
■1 tsp. vanilla
■2 C. flour
■1 Tbs. baking powder
■½ tsp. baking soda
■½ tsp. salt
Directions

Mix all ingredients well enough to moisten dry ingredients. Pour batter into a 9 x 5 loaf pan, greased on bottom only. Bake at 350 F for one hour.


Sugar-Free Impossible Cheesecake
Ingredients
■3/4 C. milk
■2 tsp. vanilla
■1 C. Splenda
■1/2 C. Bisquick
■2 eggs
■2 8 oz. pkg. cream cheese, cut into about 1/2" cubes and softened

■Topping:
■1 C. sour cream
■2 Tbs. Splenda
■2 tsp. vanilla
Directions

Preheat oven to 350 degrees. Grease pie plate. Put milk, vanilla, eggs, Splenda and bisquick in blender and blend for 15 seconds. Add cream cheese, blend on high for additional 2 minutes. Pour into pie plate and bake until center is firm 40 to 45 minutes. Mix topping and keep cool. Let cheesecake cool and spread topping. Refrigerate.


Sugar-Free Old-Fashioned Berry Cobbler

Ingredients
■1/2 C. fruit-sweet boysenberry or blueberry syrup
■3 Tbs. cornstarch
■3 Tbs. water
■3/4 tsp. cinnamon
■4 C. blackberries (or marionberries, boysenberries, blue berries)

■Dough:
■1 C. unbleached flour
■1 1/2 tsp. baking powder
■1/2 tsp. salt
■2 Tbs. melted margarine
■2 Tbs. apple juice concentrate
■1/4 C. low fat fruit-sweet berry or cherry yogurt
■1-2 packets of sweetener (as sweet as 2 tsp. sugar ea.), optional
Directions

Preheat oven to 400 degrees. Spray deep dish pie pan with nonstick spray. Stir cornstarch into water until dissolved. Mix in syrup and cinnamon, and let sit while you make the dough. Sift together flour, baking powder, and salt. In a separate bowl, combine margarine, juice concentrate, and yogurt. Pour this mixture over the sifted flour, and blend gently with a fork for 20-30 seconds. Then knead dough 20-30 more seconds. On floured surface, press dough into approximately 1/4-1/2-inch thickness, yet wide enough to cover blackberries in pan. Fold rinsed, drained berries into syrup and cornstarch mixture.



Pour berry filling into greased pan, and set cobbler dough into place over the top, making the dough surface as even as possible. Press dough against sides of pan, and cut a design in the dough for air vents. Turn oven down to 375 degrees, and bake for 20-25 minutes.



The cobbler is done when the dough is light brown. Since blackberries vary in sweetness, be prepared, after baking, to sprinkle up to 2 packets of sweetener over the top.


No Sugar Low Fat Chocolate Chip Bread


Ingredients
■2-1/4 C. reduced-fat Bisquick
■1 package(4 serving size) Jell-O sugar-free instant chocolate pudding mix
■2/3 C. nonfat dry milk powder
■1/4 C. Splenda
■2 Tbs. mini chocolate chips
■1/4 C. chopped walnuts
■2 large eggs slightly beaten
■3/4 C. fat-free vanilla yogurt
■1/2 C. cold water
■2 tsp. canola oil
■1 tsp. pure vanilla extract
Directions

Pre-heat oven to 375 degrees F. Spray a 9-by-5-inch loaf pan with butter-flavored cooking spray. In a large bowl, combine baking mix, dry pudding mix, dry milk powder, sugar substitute, chocolate chips and walnuts. In a small bowl, combine eggs, yogurt, water, oil, and vanilla extract. Add the liquid mixture to the dry mixture. Mix gently just to combine. Evenly spread batter into prepared loaf pan. Bake for 45-50 minutes or until a toothpick inserted in center comes out clean. Place loaf pan on a wire rack and let set for 10 minutes. Remove bread from pan and continue cooling on wire rack. Cut into 12 slices.


Sugar-Free Pineapple-Apricot Cooler

Ingredients
■1/3 C. SMUCKER'S® Sugar Free Apricot Preserves
■1 C. sugar free vanilla ice cream or frozen yogurt
■1 C. chopped fresh pineapple
■1/2 C. skim milk
■1/8 tsp. almond extract
Directions

In a blender, combine all ingredients and blend until smooth.



Yield: 2 servings


Sugar-Free Chocolate Fudge


Make a sugar free chocolate fudge using the microwave!



Ingredients
■2 Tbs. unsweetened cocoa powder
■1/2 C. heavy cream
■2 Tbs. butter
■4 oz. cream cheese
■1/2 tsp. vanilla
■3 Tbs. Splenda
Directions

In a small saucepan, over low heat, melt butter. Add heavy cream and cream cheese, and whisk until smooth. Add Splenda and adjust for taste. Heat until bubbling, stirring constantly. Reduce heat, and stir in cocoa and vanilla. Blend well. Pour into a small buttered dish. Place in the refrigerator to set for 3-4 hours. Cut into 8 pieces



Per Serving (1 piece): Protein 1.3g, Carbs 2.2g, Dietary Fiber 0.5g


Sugar-Free Carrot Cake

There's no reason to miss out on dessert just because you're watching your sugar!

Ingredients
■6 egg whites or 1 C. egg substitute
■1 C. apple juice concentrate
■2/3 C. canola or safflower oil
■1/4 C. water
■3 C. unbleached white flour
■1 Tbs. baking powder
■1 tsp. baking soda
■1 tsp. lite (or regular) salt
■2 tsp. cinnamon
■1/4 tsp. nutmeg
■2 C. raisins
■2 C. carrots (4-6 medium)
Directions

Preheat oven to 350 degrees. Stir together egg, apple juice concentrate, oil, and water. Set aside. Sift together dry.



Flour, baking powder, baking soda, lite salt, cinnamon, and nutmeg. Put raisins in warm water to plump. Meanwhile, grate carrots, and spray 2 round 9" cake pans with non-stick pan spray.



Gently stir wet ingredients into dry ingredients just until moistened. Drain raisins, and fold in carrots and raisins. Pour into cake pans, and bake at 350 degrees for 25-30 minutes. Then reduce heat to 325 degrees for 8 to 12 more minutes. Serve cooled (even



refrigerated) with Cream Cheese Frosting.


Sugar Free Fudgey Brownies
A brownie recipe that uses Equal instead of sugar. It's just as delicious as the real thing!

Ingredients
■6 Tbs. margarine
■4 oz. unsweetened chocolate
■1/3 C. skim milk
■1/3 C. apricot preserves with NutraSweet(r) brand sweetener or
■Apricot spreadable fruit
■1 egg yolk
■1 tsp. vanilla
■1/2 C. all-purpose flour
■10 3/4 tsp. Equal(r) Measure or
■36 packets Equal(r) sweetener or 1 1/2 C. Equal(r) Spoonful TM
■1/2 tsp. baking powder
■1/8 tsp. salt
■3 egg whites
■1/8 tsp. cream of tartar
■1/3 C. coarsely chopped walnuts (optional)
Directions

Heat margarine, chocolate, milk and apricot preserves in small saucepan, whisking frequently, until chocolate is almost melted. Remove from heat; whisk in egg yolk and vanilla; mix in combined flour, Equal(r), baking powder, and salt until smooth. Beat egg whites and cream of tartar to stiff peaks in large bowl. Fold chocolate mixture into egg whites; fold in walnuts if desired. Pour batter into greased 8-inch square baking pan. Bake in preheated 350 degree oven until brownies are firm to touch and toothpick comes out clean, 18 to 20 minutes (do not over bake). Cool on wire rack. Server warm or at room temperature.


No Sugar Raisin Cookies

All-natural and delicious, these cookies have fresh apple, oats and walnuts for a wholesome – and sugar-free – cookie

Ingredients
■1 1/2 C. raisins
■1/2 C. peeled, cored and chopped apple
■1 C. water
■1/2 C. butter
■1 C. all-purpose flour
■1 tsp. baking soda
■1 tsp. vanilla extract
■1 C. quick cooking oats
■2 eggs, beaten
■3/4 C. chopped walnuts
Directions

In a medium saucepan, combine the raisins, apples and water. Bring to a boil and cook for 3 minutes. Remove from heat and stir in the butter. Set aside to cool. In a medium bowl, stir together the flour and baking soda. Stir in the vanilla, eggs and the apple mixture until well blended. Fold in the oats and nuts. Cover dough and chill 8 hours or overnight.



Preheat oven to 350 degrees. Grease cookie sheets. Drop by rounded spoonfuls onto the prepared cookie sheet. Bake for 8-10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.


Sugar Free Apple-Banana Pie

This is a quick and easy pie that's all natural and low in sugar. No sugar added keeps the pie tasting fresh. A scoop of sugar free ice cream really finishes off the treat!

Ingredients
■1 pre-made pie crust
■Apples, peeled and sliced thin
■Bananas, sliced
■Lemon juice
Directions

Put apples and bananas into a pie plate and cover them with lemon juice. Soak for 10 minutes. Put pie crust on top and bake at 350 degrees until the crust is brown.
